Omlet For Two

Featuring Carrot Salsa Ole/Tomato Salsa Ole'

4 eggs

2 T milk

Small onion, chopped finely

1 clove garlic, mashed

3 fresh mushrooms, chopped

1 T butter

Salt and Pepper to taste

1/4 cup Carrot Salsa Ole' or Tomato Salsa Ole'

Parmesen or Cheddar Cheese, grated

Saute' onion, garlic and mushrooms in olive oil.

Beat eggs, milk, salt and pepper until fluffy.

Pour into hot skillet over low heat.

As surface becomes set, start lifting edges of omlet slightly with spatula to let uncovered portion flow under and cook. Add cheese and Salsa Ole'.

As soon as all of the mixture is set, fold in half and serve immediately.

   

 

   

Island Chutney Chicken

Featuring Island Chutney

4 chicken breasts

Salt

Pepper

Garlic powder

Onion Powder

1 Jar Island Chutney

Sprinkle chicken with spices and grill. On serving platter, place chicken topped with Island Chutney. Serve over rice.

     
   

Zinfandel Vinegarette

Featuring Zinfandel Jelly

2 T Zinfandel Jelly

1/4 cup olive oil

2 T Basalmic Vinegar

1 clove garlic

Salt and Pepper

Spring Greens

Feta Cheese, crumbled

Wisk first 5 ingredients together. Serve with greens. Top with Feta Cheese.

   

 

 
   

Sausage Blankets

Featuring Pepper Jelly/Smokin' Chipotle Sauce or Jazzy U Sauce

Cocktail sausages

Crescent rolls (ready to bake refrigerated)

Pepper Jelly/Smokin' Chipotle Sauce or Jazzy U Sauce

Wrap cocktail sausages in crescent rolls. Serve warm with Pepper Jelly, (heat level according to taste) Smokin' Chipotle Sauce or Jazzy U Sauce

   

 

 
   

Spaghetti with Eggplant, Tomatoes, and Mozzarella

 

1 lb eggplant - cut into 1/2 in cubes
1/4 cup olive oil
3/4 tsp salt & pepper
1 lb onion chopped
6 cloves garlic, minced
2 lb tomatoes about 4 chopped (4cups)
3/4 lb spaghetti
3T chopped freash basil
1/2 lb fresh mozzarella cut into 1/2 in cubes
Oregano, black olives, Romano cheese

Heat oven at 425
Toss eggplant with 2 T olive oil
1/4 t salt pinch of pepper

Spread eggplant out on baking sheet
Roast stiring occasionally until tender and brown (about 20 minutes)

Meanwhile, heat remaining 2 T oil in a large skillet over moderate heat
Add onion, cook about 8 minutes, stir in garlic. (Cook 1 minute)
Add tomato & remaining 1/2 t salt & 1/4 tsp pepper
Increase heat & cook about 10 minutes until sauce thickens

Cook spaghetti & drain
Toss with spaghetti & mozzarella cheese

Sprinkle with Romano cheese
